No one is completely sure when the butchery trade began, but it's certainly one of the oldest professions around: University of Miami scientists and underwater archaeologists discovered the remains of a butchered giant sloth at a Florida sinkhole which they estimated to be over 12,000 years old.
From these beginnings, butchers are now a staple of just about every city, town and village around the world. They take whole animals or large wholesale portions of meat and break them down into smaller portions or custom cuts which can be sold to customers. Many butchers work in specialized butcher shops or larger retail stores, while others work in farms and meat processing plants that serve wholesalers, grocery stores, and the hospitality industry.
